Buckwheat Granola

This go to crunchy granola is delicious on its own as a snack, with yoghurt for breakfast, or as a smoothie bowl topper. Buckwheat kernels are a gluten free source of amino acids, vitamins, minerals and antioxidants.


Ingredients:

  • 2 cups buckwheat kernels

  • 1/3 cup almonds, chopped

  • 1/3 cup cashews, chopped

  • 1/3 cup pepitas

  • 1/3 cup shredded coconut

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil

  • Pinch of Himalayan salt

  • 1 tsp vanilla

  • 1/2 tsp cinnamon powder

  • 1/3 cup sultanas

Directions:

  1. First soak the buckwheat kernels in a bowl of water for at least an hour or preferably overnight. Drain and rinse well.
  2. Preheat the oven to 140 degrees.
  3. Combine ingredients in a mixing bowl except for the sultanas.
  4. Spread the mixture on a large baking tray, and bake on the bottom wrack for 30 mins, then take the tray out of the oven and stir it around with a spoon, then bake again for another 15-20 mins or until golden brown.
  5. Take the tray out of the oven and stir through the sultanas. Allow to cool and store in an airtight container.
